Ingredients

  • 500 g salmon fillets cut into 1 inch cubes (~1lb)
  • 1 ½ tablespoons cornflour (US cornstarch) (6tsp) (18g)
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (sweet, mild or smoked)
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • 2 tablespoon vegetable oil , for frying

YOGURT DRESSING

  • ½ cup Greek yogurt (125ml)
  • 1 ½ tsp Sriracha
  • 2 tsp lime juice

For best results, always weigh ingredients where a weight is provided

Instructions

  • Combine the yogurt dressing ingredients and set aside.
  • Combine the cornflour and all the spices in a medium bowl.
  • Preheat 2 tablespoons of oil in a large skillet / frying pan over medium heat.
  • Toss the salmon cubes in the spice mix making sure to get as much of the mix stuck to the salmon as possible.
  • Add the salmon cubes in an even layer, but not too close together, in the pan (don’t crowd the pan; depending on its size you may need to cook them in batches – I fit one batch into a 12 inch pan).
  • Cook for 3 minutes or until pale golden underneath, then flip and cook on the other side for 2-3 minutes or until they easily flake apart.
  • Serve with rice, drizzled with the sauce.
