FOR THE BASE



  • 250 g digestive biscuits or similar (~8 ¾oz)



  • 85 g unsalted butter (3oz)



  • 1 tablespoon natural peanut butter (notes 1)

FOR THE PEANUT BUTTER CARAMEL



  • 2 tablespoons water (notes 1)



  • 2 tablespoons golden syrup (or liquid glucose or light corn syrup) (notes 1)



  • 200 g white granulated sugar (1 cup / 7oz)



  • 200 g dark brown sugar (1 cup / 7oz)



  • 170 g unsalted butter (1 ½ sticks)



  • ¾ cup thickened cream (heavy cream) (180ml)



  • cup smooth natural peanut butter (80ml)



  • ½ teaspoon salt

FOR THE WHITE CHOCOLATE GANACHE



  • 1 cup white chocolate (200g / 7oz)



  • cup thickened cream (heavy cream) (80ml)

Instructions

 

  • Line a square 8×8 inch square baking pan with baking paper, leaving an overhang on two sides for easy removal later.
  • FOR THE BASE:

    Use a food processor to blitz the cookies to fine crumbs (alternatively, place cookies in a sturdy plastic bag and carefully bash with a rolling pin until finely crushed). Transfer the crumbs to a mixing bowl.

  • In a microwave-safe bowl, gently melt the butter and 1 tablespoon of peanut butter together in 20-second increments, stirring until just melted and combined. Be careful not to overheat.
  • Pour the melted butter and peanut butter mixture over the cookie crumbs and mix thoroughly until all crumbs are moistened. Press this mixture firmly and evenly into the base of your lined baking tin. Chill in the refrigerator while you prepare the caramel.
  • FOR THE PEANUT BUTTER CARAMEL:

    In a large, clean heavy-based stainless steel saucepan, combine the white sugar, dark brown sugar, water, and golden syrup. Place over low heat and stir gently until all the sugar has completely dissolved. Once dissolved, bring the mixture to a low simmer and cover the saucepan with a lid for 2 minutes. This helps wash down any sugar crystals from the sides of the pan.

  • Remove the lid and continue to simmer on low heat. Swirl the pan occasionally for another 2-3 minutes. Add the 170g unsalted butter and stir until it fully melts and combines into the sugar mixture. Next, add the ¾ cup of thickened cream and stir until it is completely incorporated.
  • Increase the heat slightly to bring the caramel to a low rolling boil. Let it boil, stirring every so often, for approximately 10 minutes. The caramel is ready when the bubbles become noticeably larger and slower, indicating it has thickened.
  • To test the caramel’s consistency, drop a small amount into a bowl of ice-cold water. It should firm up quite quickly and be chewy, not brittle. If it’s too soft, continue boiling for another minute or two and retest. Once it reaches the desired chewy texture, remove the saucepan from the heat.
  • Stir in the ⅓ cup smooth natural peanut butter and the ½ teaspoon salt until thoroughly melted and combined. Pour this warm peanut butter caramel mixture evenly over the chilled cookie base in the prepared tin. Allow it to set at room temperature for about 1 hour, or in the refrigerator for 30 minutes.
  • FOR THE WHITE CHOCOLATE GANACHE:

    Finely chop the white chocolate and place it in a heatproof bowl.

  • In a small saucepan over low heat, gently warm the remaining ⅓ cup of thickened cream until you see small bubbles just starting to appear around the edges. Do not let it boil vigorously.
  • Pour the hot cream over the chopped white chocolate. Let it sit undisturbed for about 1 minute to allow the chocolate to soften. Then, using a rubber spatula, gently stir from the center outwards until a smooth, glossy ganache forms.
  • Pour and spread the white chocolate ganache evenly over the set peanut butter caramel layer. Transfer the tin back to the refrigerator and leave it to set completely for a further 2 hours (or until firm) before serving.
