  • In a large mixing bowl, combine all the filling ingredients: chicken mince, grated onion, grated carrot, minced garlic, panko breadcrumbs, fresh thyme leaves, mustard powder, salt, and pepper. Use a spatula or your hands to mix everything together thoroughly until all ingredients are evenly distributed throughout the chicken mince.
  • Take roughly ⅓ cup (about 90g / 3.2oz) of the chicken sausage mix. Lightly roll this portion in a small amount of plain flour to make it easier to handle. Then, shape it into a neat sausage log, ensuring it’s approximately 2cm shorter than the width of your puff pastry sheet.
  • Place the prepared chicken log on the puff pastry sheet, about 2cm in from one of the long edges. Lightly brush a little water along the pastry edges: the long side closest to you and the two short ends of the pastry bordering the sausage log. Carefully fold the long side of the pastry closest to you over the top of the sausage, pulling it gently but firmly to ensure there are no air bubbles trapped inside. Press it down securely onto the bottom layer of pastry to create a sealed seam.
  • Using a sharp knife, trim the long sausage roll away from the remaining puff pastry sheet. Then, take a fork and firmly press down around the three joined sides of the roll to create a tight, decorative seal. Trim away any small excess pastry to neaten the edges, and then cut the entire roll into 5 individual, evenly sized chicken sausage rolls.
  • Pierce the top of each sausage roll a few times with a sharp knife. This allows steam to escape during baking, preventing sogginess and ensuring a beautiful puff. Arrange the rolls on your prepared baking trays, making sure there’s at least 1 inch of space between each. Brush the tops of the rolls generously with the egg wash (the beaten egg yolk and water mixture) and, if desired, sprinkle with sesame seeds.
  • Bake for 24-26 minutes, or until the chicken sausage rolls have puffed up beautifully, the pastry is golden brown and flaky, and the filling is cooked through.
