  • Preheat your oven to 180C (160C fan forced) / 350F. Prepare an 8-inch square baking pan by lining it with baking paper, ensuring extra paper overhangs the sides for easy lifting later.
  • Roughly chop 14 Oreo cookies (equivalent to about 1 packet) and set them aside. These will be used both within the cheesecake filling and as a crunchy topping.
  • Take the remaining 28 Oreos and blitz them into very fine crumbs using a food processor or blender. Add the melted butter to the crumbs and mix thoroughly until well combined. Press this buttery crumb mixture firmly and evenly into the base of your prepared baking pan using the back of a spoon or your hands to form a compact crust.
  • In a large mixing bowl, using an electric mixer (or a stand mixer with the paddle attachment), beat the softened cream cheese and granulated sugar on medium speed until the mixture is smooth and well combined. Ensure there are no large lumps of cream cheese.
  • Gradually add the room temperature sour cream, eggs, and pure vanilla extract to the cream cheese mixture. Beat until just well mixed. Avoid overmixing, as this can introduce too much air and cause cracking. It’s okay if a few very small lumps remain. Scrape down the sides of the bowl as necessary to ensure everything is incorporated.
