Instructions

  2. Pour the cold milk into a saucepan and evenly sprinkle the powdered gelatin over the top. Allow it to “bloom” for 5 minutes (it should appear slightly wrinkled by the end).
  3. Place the saucepan over low heat and stir gently for one to two minutes, until the gelatin has fully dissolved. Do not let the milk come to a simmer.
  4. Add the honey and stir again until it is completely incorporated. This should take approximately 30 seconds. Ensure the milk remains just warm and does not get too hot.
  5. Take the saucepan off the heat. Pour in the cream, almond extract, and salt, mixing until all ingredients are thoroughly combined.
  6. Divide the mixture evenly among 6 ramekins or glasses. Place them immediately into the fridge and allow them to set for at least 4 hours, or preferably overnight. They can be prepared up to 2 days in advance.
  7. Remove from the fridge and garnish with additional honey, almonds, and toffee, if desired, just before serving.

Notes

  1. To successfully unmold the panna cotta: If you plan to turn your panna cotta out onto a plate, begin by lightly spraying 6 dariole molds or ramekins with a neutral oil spray. Then, gently wipe them with a paper towel to leave only a very thin, even coating of oil.
  2. Unmolding Process:
    • Prepare a shallow dish with about an inch of warm water (for tin molds) or hot water (for ceramic ramekins).
    • Carefully place each panna cotta mold into the warm water for 10-20 seconds.
    • Next, place your serving plate upside down on top of the panna cotta mold and, holding both together, flip them over. Give the mold a gentle shake. The panna cotta may require a little coaxing, but it should slide out perfectly onto the plate.
    • If it doesn’t release immediately, very lightly press around the edge of the panna cotta with a clean finger to help detach it from the sides, then try again.
    • If still stubborn, it simply needs a touch more time in the warm water. Be patient!
  3. Temperature Sensitivity: Panna cotta will begin to melt if left out of the fridge for too long. If you plan to unmold them before serving, ensure you have adequate space in your refrigerator to store all the plated desserts until they are ready to be presented.
  4. Honey Quality: The flavor of your honey is paramount in this recipe. Please choose a high-quality honey whose taste you truly enjoy, as it is the star of this dessert. The better the honey, the more exquisite your panna cotta will be.
