  • 195 g plain flour (all purp flour) (1 ½ cups / 6.9oz)
  • 1 teaspoon baking powder
  • cup caster sugar (or granulated) (133g / 4.7oz)
  • 113 g unsalted butter softened, (1 stick / ½ cup / 4oz)
  • 1 large egg room temp
  • 1 teaspoon vanilla extract
  • ¼ cup strawberry jam

For best results, always weigh ingredients where a weight is provided

Instructions

  • Preheat your oven to 180C (160C fan forced) / 350F. Line 2 cookie trays with baking paper to prevent sticking.
  • In a medium bowl, thoroughly mix together the fine desiccated coconut, plain flour, and baking powder. Set this dry mixture aside.
  • In a large mixing bowl, beat together the softened unsalted butter and caster sugar until the mixture becomes light, pale, and creamy. This should take about 2-3 minutes with an electric mixer. Add the egg and vanilla extract, then continue to beat until everything is well combined and smooth.
