- 320 g (11.2 oz) dry penne pasta, or a similar short pasta shape

- 1 tablespoon vegetable oil (or olive oil)
- ½ small red onion, finely diced
- 2 Italian sausages (or pork sausages), casings carefully removed
- 2 cloves garlic, minced
- 1 ½ teaspoons dried sage
- 1 cup chicken stock (or vegetable stock/broth)
- 2 tablespoons tomato paste
- ¾ cup whole milk (or unsweetened plant-based milk / half-and-half for extra richness)
- 45 g (1.6 oz / ⅔ cup not packed) finely grated Parmesan cheese, freshly grated for best results
- ½ teaspoon freshly cracked black pepper, or to taste

Step-by-Step Instructions
- Prepare and Cook the Pumpkin: Peel and deseed the pumpkin, then cut it into uniform 2.5cm (1-inch) cubes. Place the pumpkin in a large saucepan with about 2 liters of water. Bring to a boil, then cook for 7-10 minutes until the pumpkin is very soft and tender. Carefully remove the cooked pumpkin with a slotted spoon and transfer it to a blender. With the blender’s lid vent open (or after allowing it to cool slightly, or adding half the stock), blend until you achieve a perfectly smooth puree (this should yield approximately 1 cup of puree).
- Cook the Pasta: Add the dry pasta and 2 teaspoons of salt to the pumpkin cooking water remaining in the saucepan and bring it back to a vigorous boil. Cook the pasta for 8-10 minutes, or until it is just before al dente (meaning it should be slightly firmer than your preferred eating texture, as it will continue to cook in the sauce). Before draining, reserve 1 cup of the starchy pasta water, then drain the pasta and set it aside.

Add the finely diced onion and the crumbled Italian sausage (casings removed). As the sausage cooks, use a wooden spoon to break it up into small pieces.
