Key Ingredients for Success
Creating these irresistible Steak Crostini relies on a thoughtful selection of just a handful of really great ingredients. The secret to their truly unforgettable flavor lies in using the best quality components you can find. This commitment to quality will undoubtedly shine through in every delicious bite.

Jump to the full recipe card for precise measurements and detailed instructions.
- Baguette: The foundation of our crostini! Opt for a good quality, crusty baguette. For easier eating and a more elegant presentation, a thinner baguette, similar to a ciabatta baguette, works better than the larger, rounder varieties. The goal is to create thin slices, about 1cm or ⅖ inch, which toast up perfectly crunchy and are easy to pop into your mouth. For more detailed instructions on perfecting your base, check out our guide on how to make crostini.
- Steak: Don’t skimp on quality here; the steak is the star of the show! You only need one large steak to yield approximately 20 crostini, so invest in a premium cut. Excellent choices include rib-eye (which I used here), scotch fillet, porterhouse, sirloin, eye fillet, or beef tenderloin. The key is selecting a cut that remains beautifully tender when cooked to a medium or medium-rare doneness, ensuring a luxurious texture.
- Soft Goat Cheese: This creamy, tangy cheese provides a wonderful counterpoint to the richness of the steak and the sweetness of the sun-dried tomatoes. Ensure it’s a soft, spreadable variety, allowing for easy application onto your crisp crostini. Its distinct flavor adds a gourmet touch.
- Rocket (Arugula): Known for its distinctive tart, fresh, and peppery notes, rocket adds a crucial layer of flavor and a vibrant green visual appeal. It’s also recognized by many names globally, including arugula, colewart, roquette, and ruchetta. Its slight bitterness helps to balance the richness of the other ingredients.
- Sun-Dried Tomato Dressing: This dressing is nothing short of incredible, harmoniously blending with the other flavors of these beef crostini. It’s a simple yet powerful concoction that brings sweetness and acidity from balsamic vinegar. The sun-dried tomatoes themselves, along with some of their flavorful oil, contribute a rich umami depth and a subtle natural sweetness. A touch of sugar enhances this sweetness, while freshly cracked black pepper adds a gentle warmth. This dressing is a slight adaptation of the one I love using on my Italian chicken tray bake, proving its versatility and deliciousness.

1. Master the Crostini Base
The beauty of homemade crostini is that they can be prepared up to a week in advance, saving you valuable time on the day of your event! Begin by slicing your chosen baguette into uniform pieces, approximately 1cm (or ⅖ inch) thick. It’s crucial to get this right: slices that are too thick will be tough to bite through, while overly thin slices might break easily. The ideal crostini should be wonderfully crunchy without being brittle. To achieve this, lightly brush both sides of each baguette slice with a little olive oil, then sprinkle generously with flaky sea salt. Arrange them on a baking sheet and bake for 8-10 minutes, or until they turn a beautiful golden brown and are thoroughly crisp. Once cooled, store them in an airtight container in your pantry.

2. Prepare the Flavorful Sun-Dried Tomato Dressing
This chunky and vibrant sun-dried tomato dressing is what elevates these beef crostini from good to absolutely outstanding. Its rich, tangy, and slightly sweet profile perfectly complements the savory steak and creamy goat cheese. Preparation couldn’t be simpler: just combine all the dressing ingredients in a small bowl. Give them a good stir, then set the dressing aside. Allowing it to rest for a while lets the flavors meld and deepen, creating a more complex and satisfying taste. This dressing can also be made a few days in advance and stored in the fridge, making it another fantastic make-ahead component.

3. Perfectly Cook Your Steak
The key to tender steak is starting with it at room temperature. Approximately 30 minutes before cooking, remove your steak from the refrigerator. Season both sides generously with salt (hold off on the pepper until after cooking to prevent it from burning and turning bitter). Rub a little oil over the surface of the steak, then place it in a very hot pan – a cast iron or stainless steel skillet is ideal for developing a beautiful crust. Sear the steak for 3-5 minutes per side, adjusting timing based on its thickness and your desired level of doneness. For specific temperature guidelines, refer to the “Tips and Tricks” section below. If you’re using a pan that isn’t non-stick, a small amount of oil added to the pan itself will prevent sticking and aid in browning.

4. Assemble Your Gourmet Steak Crostini
Once your steak has rested and your crostini are ready, it’s time for the final assembly. This is where all the wonderful flavors come together. Begin by spreading a generous layer of soft goat cheese over one side of each toasted crostini. The creamy texture and tangy flavor of the goat cheese provide a perfect base and a delightful contrast to the other components.

Before adding the rocket (arugula) to the crostini, lightly dress it with a touch of the liquid from your sun-dried tomato dressing. This adds another layer of flavor and prevents the rocket from being dry. Place a few leaves of the dressed rocket on top of the goat cheese, adjusting the quantity based on the size of the leaves. Next, thinly slice your rested steak against the grain – this ensures maximum tenderness and makes each bite effortless. Place a slice of tender steak onto each crostini, nestling it amongst the rocket.

Finally, complete your gourmet masterpiece by drizzling a little of the sun-dried tomato dressing over each crostini. Focus primarily on scattering the chunky sun-dried tomatoes and just a minimal amount of the liquid to avoid saturating the crostini. A few extra small rocket leaves for garnish will add a professional touch. Your stunning Steak Crostini are now ready to be presented and devoured!

Expert Tips for Perfect Steak Crostini
Achieving culinary perfection with your Steak Crostini is easier than you think with a few simple techniques and expert advice. These tips and tricks will help you ensure every bite is as delicious and tender as possible, making your appetizer the highlight of any gathering.
- Bring Steak to Room Temperature: This is a crucial step for even cooking. Always take your steak out of the refrigerator at least 30 minutes before you plan to cook it. A room-temperature steak cooks more uniformly from edge to center, resulting in a perfectly tender interior.
- Mind Your Crostini Thickness: The ideal crostini slice should be about 1cm (⅖ inch) thick. Slices that are too thick can be overly hard and difficult to bite through, while overly thin slices might become brittle and crumble easily, especially if the bread has large holes. Aim for that perfect balance of crunch and sturdiness.
- Garlic Rub for Extra Flavor: For an additional layer of aromatic flavor, try this simple trick: once your crostini come out of the oven and are still warm, peel a garlic clove, cut it in half, and gently rub the cut side over the surface of each toasted baguette slice. This imparts a subtle yet delicious garlicky essence without being overpowering.
- Use a Meat Thermometer for Perfect Steaks: Eliminate guesswork and achieve your desired doneness every time with a reliable meat thermometer.
- For **medium-rare**, aim for an internal temperature of 54°C (130°F) in the thickest part.
- For **medium**, target 58°C (140°F).
- For **medium-well**, cook until it reaches 62°C (145°F).
Remember that the steak will continue to cook slightly after being removed from the heat (carryover cooking), so remove it a degree or two before your target temperature.
- Slice Steak Against the Grain: This technique is paramount for ensuring a tender bite. After cooking, always slice the steak thinly *across the grain* of the meat. This shortens the muscle fibers, making the steak significantly more tender and easier to chew, enhancing the overall crostini experience.
- Don’t Forget to Rest Your Steak: After cooking, transfer the steak to a warm plate and tent it loosely with foil for 5-10 minutes. This resting period allows the juices to redistribute throughout the meat, resulting in a more flavorful and tender steak. Skipping this step can lead to dry steak.
Delicious Variations to Try
While the classic Steak Crostini recipe is undeniably perfect, there’s always room to explore and customize it to your personal preferences or the ingredients you have on hand. These variations can introduce new layers of flavor and texture, making each batch unique and exciting. Don’t hesitate to experiment and make this recipe truly your own!
- Fresh Herbs: Elevate the fresh notes with the addition of finely chopped fresh herbs. Chives offer a delicate oniony flavor, while basil provides a sweet, aromatic touch. If you can find micro herbs, a sprinkle on top of each crostini adds not only a burst of flavor but also a beautiful, gourmet presentation. For an added depth during cooking, try placing a few sprigs of rosemary in the pan with your steak, gently rubbing them against the meat from time to time to infuse a woody, fragrant essence.
- Sour Cream for Creaminess: If you desire a slightly different texture or a touch more creamy tang in your goat cheese spread, consider mixing in a small amount of sour cream. This will make the cheese even smoother and add a subtle richness that can be delightful.
- Dijon Mustard Kick: For those who appreciate a bit of a zesty bite, a tiny amount of Dijon mustard mixed into the goat cheese spread can be a fantastic addition. Its sharp, savory notes pair wonderfully with both the goat cheese and the steak, adding an unexpected layer of complexity.
- Chilli Flakes / Red Pepper Flakes: If you’re a fan of heat, a pinch of chili flakes or red pepper flakes added to the sun-dried tomato dressing will provide a wonderful spicy kick. This can create a lively contrast to the creamy and savory elements, awakening the palate with every bite.
- Different Cheeses: While goat cheese is traditional and delicious, feel free to experiment with other soft, spreadable cheeses. Cream cheese, whipped feta, or even a herbed Boursin could offer interesting alternatives, each bringing its own unique flavor profile.
- Alternative Greens: If rocket isn’t available or you prefer a milder taste, baby spinach or a delicate mixed greens blend can be used. Just ensure they are lightly dressed to enhance flavor.

⏱️ Time-Saving Prep Strategies
Hosting can be stressful, but with smart planning, preparing these delectable Steak Crostini can be a breeze. The beauty of this recipe lies in its flexibility, allowing you to prepare several components in advance, leaving you more time to enjoy your guests and the party!
- You can **make the crostini up to 1 week ahead** of time. Once baked and completely cooled, store them in an airtight container in your pantry. This keeps them wonderfully crisp and ready for assembly.
- The **sun-dried tomato dressing is also an excellent make-ahead component**. Prepare it up to 3 days in advance and store it in an airtight jar or container in the fridge. This allows the flavors to deepen and meld, making it even more delicious.
- While the **steak is best cooked as close to serving as possible** for optimal tenderness and warmth, it can absolutely be served cold or at room temperature. If you plan to serve it cold, slice it thinly only just before you begin assembling the crostini to maintain its juiciness and prevent it from drying out.
- You can **begin assembling your crostini with the goat cheese and rocket a couple of hours before serving**. The goat cheese acts as a barrier, protecting the crostini from moisture. However, avoid assembling much earlier than this, as prolonged contact with the toppings may cause the crostini to soften. That being said, even if the crostini aren’t super crunchy, they will still taste amazing – a slightly softer crostini is still a delicious one!
- **Wash and dry your rocket (arugula) ahead of time** and store it in the refrigerator. This small step can save a few minutes during crunch time.
Frequently Asked Questions About Crostini
Crostini and bruschetta are often confused, but they have distinct differences. Crostini, which literally means “little crusts” in Italian, are thin slices of baguette or similar small bread, toasted until they are crunchy throughout. They are typically topped with a myriad of ingredients, from savory spreads to meats and vegetables. Bruschetta, on the other hand, is generally made with thicker slices of Italian or country bread, often grilled or toasted but not usually crunchy all the way through. It’s most famously served topped with a fresh mix of diced tomatoes, basil, garlic, and olive oil.
The golden rule for crostini toppings is to assemble them as close to serving time as possible, especially when using any wet ingredients or dressings. This prevents the crispy crostini base from becoming soggy. When thinking about flavor profiles, a good strategy is to include “something creamy” (like goat cheese), “something tangy” (like balsamic vinegar or a squeeze of lemon), and often “a little of something sweet” (like sun-dried tomatoes or a drizzle of honey) to create a balanced and exciting bite.
In Italian, “crostini” literally translates to “little crusts”. This perfectly describes their characteristic crispy texture and small size, making them ideal bite-sized appetizers.
To ensure your crostini remain wonderfully crispy, the best strategy is to assemble them just before serving. Any moisture from the toppings can quickly seep into the toasted bread, making it soft. A fantastic trick is to use a creamy base, like goat cheese or another spreadable cheese, as the first layer. This acts as a protective barrier, preventing liquids from other ingredients (like the dressing or juicy steak) from reaching and softening the toast too quickly. If preparing slightly ahead, choose toppings that are less watery and add dressing just before presentation.
For Steak Crostini with rich flavors like sun-dried tomatoes and goat cheese, a medium-bodied red wine is often an excellent choice. A Pinot Noir, with its earthy notes and bright acidity, can beautifully complement the steak without overpowering the cheese. A Merlot or a Sangiovese could also work well, offering a fruit-forward profile that stands up to the meat while harmonizing with the dressing.

- 1 tablespoon balsamic vinegar (notes 1)
- ¼ teaspoon sugar
- ¼ teaspoon freshly cracked black pepper
CROSTINI
- 1 crusty thin baguette sliced into ~1cm pieces / ⅖ inch. You need 20 slices (notes 2)
- 2-3 tablespoons extra virgin olive oil as needed
- Flaky sea salt to taste
For best results, always weigh ingredients where a weight is provided
Equipment
-
Non stick skillet / frying pan
-
Baking sheet
-
Bread knife
-
chopping board
-
mixing bowl
Instructions
-
Bring the steak to room temperature by taking it out of the fridge 30 minutes prior to cooking. This helps it cook more evenly.
-
FOR THE CROSTINI (can be made up to 1 week ahead):
Preheat your oven to 200°C (180°C fan forced) / 395°F.
-
Lay the sliced baguette pieces out on a baking sheet. Using a pastry brush, lightly coat both sides of each slice with a little olive oil. Sprinkle a small pinch of flaky sea salt over each piece for enhanced flavor.
-
Bake for 8-10 minutes, making sure to flip them halfway through, until they are golden brown and perfectly crisp. Once done, remove from the oven and let them cool completely. If preparing in advance, store your crunchy crostini in an airtight container in the pantry for up to one week.
-
FOR THE DRESSING (can be made up to 3 days ahead):
Finely chop the sun-dried tomatoes and transfer them to a small bowl. Add the sun-dried tomato oil (or olive oil if you don’t have the former), balsamic vinegar, sugar, pepper, and a pinch of salt. Mix all ingredients thoroughly until well combined. Set aside to allow the flavors to meld. If making ahead, store the dressing in an airtight jar in the refrigerator.
-
FOR THE STEAK (best done the day of or right before serving):
Place a large non-stick frying pan on the stove over medium-high heat. Allow it to heat for 3-4 minutes until it’s very hot. If using a stainless steel or cast iron skillet (not non-stick), you will need to add 2-3 tablespoons of oil to the pan at this stage. With a good quality non-stick pan, additional oil is usually not necessary.
-
While the pan is heating, rub 1 teaspoon of oil over both sides of your steak. Then, massage ½ teaspoon of salt evenly over the entire surface of the steak.
-
Carefully place the seasoned steak into the hot pan. Cook for 3-5 minutes on each side, adjusting the cooking time based on your preferred doneness and the steak’s thickness.
-
For perfectly cooked steaks, use a meat thermometer. Aim for an internal temperature of 54°C (130°F) in the thickest part for medium-rare, 58°C (140°F) for medium, and 62°C (145°F) for medium-well. For steaks of this specific size (1-1½ inches thick), achieving medium-rare typically takes around 10 minutes total cooking time. If you notice fond (brown bits) forming excessively on the bottom of the pan, gently move the steaks around to lift the fond and prevent it from burning, which could impart a bitter flavor.
-
While the steaks are cooking, warm a plate in the microwave for 1-1½ minutes until it’s warm to the touch (not hot). Once the steaks are cooked to your liking, transfer them immediately to the warm plate and tent loosely with a piece of aluminum foil (do not cover tightly). Allow the steak to rest for 5-10 minutes; this is crucial for juicy, tender results.
-
ASSEMBLING THE STEAK CROSTINI (best done close to serving):
While the steak rests, thoroughly wash and dry the rocket (arugula). Then, in a separate small bowl, dress the rocket with just a light drizzle of the liquid from your sun-dried tomato dressing.
-
Generously spread about 2 teaspoons of soft goat cheese over one side of each crostini. Then, top with 1-3 pieces of the dressed rocket, depending on their size. Reserve any smaller, more delicate pieces of rocket for garnish.
-
Thinly slice the rested steak against the grain to maximize tenderness, and place one slice on top of each crostini. Give the sun-dried tomato dressing a final mix, then scatter some of the chunky tomatoes over each crostini, being mindful not to add too much of the liquid, as this could soften the crostini. Garnish with those reserved small pieces of rocket, then serve your exquisite Steak Crostini immediately for the best experience.

Notes
- Tablespoons: Please note that I use a standard Australian 20ml tablespoon in this recipe (which is equivalent to 4 teaspoons). We recommend checking the capacity of your measuring spoons before you begin to ensure accuracy in your measurements.
- Crostini Thickness: For the best eating experience, it’s advisable to slice your baguette into thinner pieces rather than thicker ones. Since crostini are designed to be very crunchy, large or thick slices can be hard to bite through and might even hurt your mouth. Aim for slices around 1cm (⅖ inch) or slightly less. However, be cautious not to go too thin, especially if your bread has a lot of larger air pockets, as it may become too brittle and fall apart easily.
- Timing for Assembly: Steak Crostini are truly at their best when assembled as close to serving time as possible. While the steak can be served cold, at room temperature, or warm, assembling just before serving ensures the crostini remain wonderfully crisp. Assembled crostini can stay relatively crispy in the fridge for a good few hours, especially with the goat cheese acting as a barrier, but they will gradually soften over longer periods. To further assist with prep, the rocket can be washed and dried ahead of time, and the sun-dried tomato dressing can be made 2-3 days in advance and stored in an airtight container or jar with a tight-fitting lid in the fridge. The toasted crostini themselves can be made a week ahead and kept in an airtight container in the pantry.
