  • ¼ cup unsalted butter (57g / 2oz)

  • Create a well in the center of your dry mixture. Add the two large eggs and the slightly cooled melted butter into the well. Whisk gently, starting from the center and gradually incorporating the dry ingredients, until everything is just combined and no dry streaks of flour remain. Do not overmix.
  • Transfer the thick batter into the prepared baking tin. Use a spatula or the back of a spoon to press and spread the batter evenly to all the edges of the tin, ensuring the top surface is relatively level for consistent baking.

Kitchen scales are relatively inexpensive and provide much greater consistency than volume measurements. If you don’t have a scale, use the “spoon and level” method for flour and cocoa (spoon the ingredient into your measuring cup, then level off with a straight edge; do not scoop directly from the bag).
