  • 2 kg whole butternut squash (roughly 4 ½lb)
  • 1 large brown onion
  • 4 cloves garlic
  • 1 ½ teaspoons salt
  • 4 cups chicken stock
  • ½ teaspoon dried chilli flakes (optional)

Instructions

  • Preheat your oven to 200°C / 395°F / 180°C fan-forced.
  • Cut a thin slice off each end of the butternut squash to create flat surfaces. Stand it on one end and carefully cut straight down through the middle to halve it lengthwise.
  • Scoop out and discard the seeds and stringy bits with a spoon. Then, score a checkerboard pattern across the exposed flesh side of each butternut half, about 2-3mm deep.
  • Place the butternut halves, cut side up, on a baking tray lined with parchment paper. Brush a little olive oil over the top, then sprinkle a portion of the salt over the scored flesh.
  • Peel the onion and cut it in half or quarters. Place the onion pieces and peeled garlic cloves into the seed cavities of the butternut squash.
