- 100 g rasher bacon (3 ½ oz)
- 1 medium leek, washed and thinly sliced
- 800 g skinless boneless chicken thighs, cut into small cubes
- 1 ½ tablespoons Tuscan seasoning (6 tsp, see notes)
- ¼ teaspoon freshly cracked black pepper
- 1 ½ tablespoons flour (6 tsp, see notes)
- 180 ml low sodium chicken stock (¾ cup)
- 1 tablespoon white wine vinegar
- 3 big handfuls fresh baby spinach
- ⅓ cup creme fraiche (80ml)
- 12 sheets filo pastry
- 85 g butter melted (3oz) (or sub olive oil)

FOR THE FILLING – Make a couple of hours or day ahead, so that it can cool in time:
Heat the oil in a large pan over medium heat, then add the bacon. Cook for 1 minute until it starts to render.

Add the leek and cook for a further 3-4 minutes over medium heat, until the leek has softened and is translucent. Set both the bacon and leek aside on a plate.

If no bacon fat remains in the pan, add a dash of oil. Then, add the chicken, Tuscan seasoning, and pepper and give it a good mix to coat evenly. Cook for another 6-8 minutes, turning a couple of times, until the chicken is just cooked through and lightly browned.

Sprinkle over the flour and stir well, ensuring it coats all the chicken. Cook for another minute to remove the raw flour taste.

Add the chicken stock and bring it to a boil. Cook for 5-6 minutes, stirring frequently, to reduce the liquid and get the sauce very thick, almost like a gravy. This is crucial for a crisp pastry base.

Turn the heat down to low. Add the white wine vinegar and the creme fraiche, stirring until fully melted and incorporated into the sauce. The sauce should be incredibly thick and coating the filling, not liquidy.

Finally, turn the heat off and stir in the baby spinach until it has just wilted into the hot filling.

Allow the filling to cool completely to at least room temperature before adding it to the pie case. The filling can be stored in the fridge overnight, covered with plastic wrap, if made ahead.

TO ASSEMBLE AND BAKE:
Preheat oven to 200°C (180°C fan forced) / 395°F.

Take the melted butter and use only the clear yellow part at the top (avoiding the milk fats that sink to the bottom). Brush one sheet of filo pastry all over.

Place it into a 9-inch pie dish with part of it overhanging the edge. Repeat this process with 4 more sheets, overlapping them in different directions each time, ensuring there’s an overhang all the way around the edges and the base is well covered. Keep unused filo covered with a damp cloth.

Add the cooled chicken mixture to the pastry shell. If you notice any excess runny sauce, hold it back. Fold a sheet of filo in half and place it directly on top of the chicken filling, then fold all the overhanging pastry sheets over the top of the filling to seal.

With the final 6 sheets of pastry, brush each one generously with the clarified butter. Gently scrunch them up (butter side out) and arrange them artfully over the top of the pie filling to create a beautiful, rustic, and crispy crust.
