- 140 g unsalted butter (5oz)
- 150 g brown sugar (¾ cup)
- 1 tablespoon honey or golden syrup (see notes)

- 125 g dark chocolate (~4 ½oz)

- Let the mixture come to a simmer and allow it to continue bubbling for exactly 2 minutes. This step is crucial for achieving the perfect toffee consistency.
- Stir in the orange zest (if using) and salt.
