  • 1 cup apple cider (actual cider, not vinegar) (250ml)
  • 1.8 kg skinless boneless pork shoulder / pork butt (4lb) (see notes 2&3)
  • 2 tablespoons brown sugar (see notes 1)
  • 1 tablespoon paprika mild or smoked (see notes 1)
  • 1 tablespoon cooking salt / kosher salt (see notes 1)
  • 2 teaspoons onion powder
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon garlic powder
  • 1 tablespoon sunflower or vegetable oil (see notes 1)

FOR THE BBQ SAUCE

  • 1 cup tomato sauce (tomato ketchup)
  • ⅓ cup red wine vinegar
  • ¼ cup brown sugar packed
  • 2 tablespoons Dijon mustard (see notes 1)
  • 2 tablespoons Worcestershire sauce (see notes 1)
  • 2 teaspoons dark soy sauce optional
  • ½ teaspoon garlic powder
  • 2-3 teaspoons hot sauce to taste or cayenne/chili powder to taste

Instructions

  • Place the roughly cut onion and cider into the base of a slow cooker.
  • Trim the pork of any excess fat, leaving just a thin layer over the top for flavor and moisture – avoid removing all of it. If your pork has skin, you’ll need to remove that first.
  • Cut the pork into 3-4 large chunks to ensure even cooking and easier handling.
  • In a small bowl, mix together the brown sugar, paprika, salt, onion powder, oregano, cumin, and garlic powder. Thoroughly massage this spice rub into all surfaces of the pork chunks, ensuring it gets into every nook and cranny. Use up all the rub.
  • Heat the oil in a large skillet / frying pan over medium heat. Add the seasoned pork pieces, allowing each side to develop a golden-brown crust and a slight char before turning. Keep a close eye on the heat to prevent the sugar in the rub from burning. The meat does not need to be cooked through at this stage; the goal is to build flavor through browning.
  • Transfer the browned pork to the slow cooker, placing it on top of the onions. Cook on the high setting for about 3-4 hours.
  • Around the 3-hour mark, check the pork for doneness. If it easily tears apart when probed with a fork, it’s ready. If not, continue cooking for an additional 30-60 minutes until it is perfectly tender and shreds effortlessly.
  • Set the cooked pork aside on a large chopping board. Carefully pour or ladle the cooking juices from the slow cooker into a large, heavy-based saucepan set over medium heat. Add all the remaining BBQ sauce ingredients. Stir well to dissolve the sugar and bring the sauce to a rolling boil. Continue to cook, stirring regularly, for 10-15 minutes until the sauce has reduced by half and thickened. You should aim for approximately 500ml / 2 cups of rich sauce to generously coat the meat.
  • Using two forks, shred the pork by pushing and pulling the meat apart until it’s completely pulled. Return the shredded pork to the slow cooker bowl, along with as much of the homemade BBQ sauce as you desire (I recommend adding all of it for maximum flavor!). Toss everything together until the pork is thoroughly combined and coated in the sauce.

Aim for a boneless and skinless cut.
