The Ultimate Three-Layer Fudge Experience
What makes this Caramel Peanut Fudge so extraordinary is its harmonious blend of textures and flavors, expertly layered to create a truly unforgettable confection. We start with a creamy peanut butter base, build upon it with a chewy, homemade caramel, and crown it all with a smooth, glossy milk chocolate ganache. A sprinkle of roasted peanuts adds that essential crunch, transforming each bite into a symphony of sweet and savory notes. This layered approach not only enhances the eating experience but also simplifies the preparation, as each stage comes together quickly and easily.
Layer 1: Simple 3-Ingredient Peanut Butter Fudge Base
Every great fudge begins with a solid foundation, and our **3-ingredient peanut butter fudge layer** is as simple as it is delicious. This incredibly easy base combines just three pantry staples: creamy white chocolate, rich sweetened condensed milk, and smooth peanut butter. The magic happens effortlessly in a saucepan over low heat, where these ingredients melt together to form a velvety, irresistible mixture. Once smooth, this luscious blend is poured directly into a lined 8×8 inch square baking tin, ready to chill and provide the perfect sweet, nutty canvas for the layers to come.
While candy making can sometimes be a delicate art, even with seemingly foolproof ingredients like chocolate and condensed milk, environmental factors such as humidity can occasionally cause challenges. A common issue, especially in humid climates, is the **fat separating** during the melting process. If you notice this happening while preparing your peanut butter fudge layer, there’s no need to worry! Simply remove the saucepan from the heat and stir the mixture gently but consistently. With a little patience, it will come back together into a smooth, cohesive consistency, proving that even minor hiccups are easily resolved.
This peanut butter layer is wonderfully versatile. While smooth peanut butter provides a classic flavor, feel free to experiment with other delightful spreads. For a luxurious chocolate-hazelnut twist, substitute peanut butter with Nutella. Alternatively, if you’re a fan of spiced biscuits, Biscoff spread makes an excellent choice, creating a unique and equally addictive treat, as demonstrated in our popular Biscoff fudge recipe. These simple swaps allow you to customize your fudge and discover new favorite flavor combinations.

Layer 2: Luscious Condensed Milk Caramel
The heart of our Caramel Peanut Fudge is its incredibly **smooth and creamy caramel layer**, crafted with the magic of sweetened condensed milk. This method yields a perfectly chewy caramel that’s a joy to bite into, offering a wonderful contrast to the softer peanut butter base. The best part? You can begin preparing this layer immediately after finishing the peanut fudge, and even use the same saucepan after a quick rinse. Once you master the art of making caramel with condensed milk, you’ll find yourself dreaming up countless ways to incorporate this delightful creation into other desserts and treats.
Here’s how to create this irresistible caramel layer:
- Begin by combining sweetened condensed milk, butter, light brown sugar, and golden syrup in your saucepan over low heat. The golden syrup is a key ingredient, helping to prevent the caramel from becoming grainy and ensuring a silky-smooth texture. If golden syrup isn’t available, brown rice malt syrup or corn syrup are excellent alternatives that will achieve similar results.
- Stir the mixture continuously until the sugar fully dissolves. Once dissolved, allow the mixture to come to a gentle bubble. Continue to cook, stirring constantly for approximately 4-5 minutes. This consistent stirring is crucial to prevent burning on the bottom of the pan and to encourage even thickening and a slight darkening of the caramel’s color. The caramel will visibly thicken as it cooks, indicating it’s developing its signature chewy consistency.
- Once the caramel has reached the desired thickness and color, remove it from the heat. Stir in the vanilla extract for a warm, aromatic note, and a pinch of salt to balance the sweetness and enhance the overall flavor profile.
- Carefully pour the hot caramel evenly over the chilled peanut butter fudge layer. For an added textural delight and a true candy bar experience, sprinkle some unsalted peanuts generously over the warm caramel. This creates a wonderful crunch that complements the smooth layers perfectly. Allow this layer to set for at least an hour in the refrigerator before proceeding to the final topping.
This caramel layer is not only incredibly flavorful but also remarkably stable, making it ideal for a layered fudge that needs to hold its shape. The combination of condensed milk and golden syrup works harmoniously to create a caramel that is both rich in taste and perfect in texture, setting the stage for the final chocolatey flourish.
Layer 3: Silky Milk Chocolate Ganache Topping
Crowning this delightful creation is a wonderfully simple, yet incredibly effective, **2-ingredient milk chocolate ganache**. While you could certainly opt for plain melted milk chocolate as a topping, ganache offers a superior experience, especially for fudge that will be stored in the refrigerator. The ganache remains beautifully pliable and easy to cut, preventing the chocolate from cracking or shattering as you slice the fudge. Furthermore, the cream in the ganache subtly balances the overall sweetness, adding a touch of sophisticated richness that perfectly complements the caramel and peanut butter layers.
Making a flawless ganache is straightforward: it’s always best practice to finely chop your milk chocolate and place it in a heatproof bowl. Then, heat the heavy cream (also known as thickened cream) in a small saucepan until it just begins to bubble around the edges. Pour the hot cream directly over the chopped chocolate. Resist the urge to stir immediately; instead, let it sit undisturbed for 2-3 minutes. This allows the heat from the cream to gently melt the chocolate, ensuring a smooth and lump-free texture. After this brief resting period, stir the mixture gently from the center outwards until it transforms into a beautiful, glossy, and perfectly smooth milk chocolate ganache.
Once your ganache is ready, pour it over the slightly chilled caramel and peanut layers, spreading it evenly to cover the entire surface. For an extra touch of nostalgia and to truly emulate the flavor profile of a Picnic bar, consider adding a layer of crushed vanilla wafers directly onto the caramel before pouring the ganache. The wafers provide a delightful, satisfying crunch that elevates the fudge even further. Allow the entire fudge to chill in the refrigerator for 3-4 hours, or until fully set, before cutting it into squares. This ensures clean, defined pieces that hold their shape beautifully.
This easy fudge is truly at its best when **kept in the fridge in an airtight container**, where it will maintain its freshness and delightful texture for 7-10 days. The chilled environment keeps the layers firm and distinct, ensuring every bite is as perfect as the first. This makes it an ideal make-ahead dessert for parties, gatherings, or simply to enjoy as a special treat throughout the week.

Imagine unwinding after a long day, sitting comfortably with a steaming cup of coffee or tea, and indulging in a piece of this exquisite chocolate-covered, caramel and peanut fudge. Each small bite is a moment to savor, a perfect blend of sweet and savory that melts delightfully in your mouth. This isn’t just a dessert; it’s a little luxury, a moment of pure bliss. Be warned, though: if you leave this irresistible treat out on your kitchen counter, it’s destined to vanish in no time!
This Caramel Peanut Fudge is perfect for any occasion – from a cozy night in to a festive holiday gathering. Its rich flavors and impressive layered appearance make it a fantastic homemade gift, sure to be appreciated by anyone lucky enough to receive it. Equipment
-
Heavy Based Saucepan
-
8×8 inch Square Baking Tin
Instructions
-
FOR THE PB FUDGE LAYER:
Line a square 8×8 inch baking pan with baking paper, ensuring there’s an overhang to easily lift the fudge later.
-
Combine the finely chopped white chocolate, smooth peanut butter, and sweetened condensed milk in a heavy-based saucepan. Place over very low heat. Melt the ingredients together, stirring continuously for approximately 4-5 minutes, until the mixture is completely smooth and well combined. Refer to notes regarding fat separation.
-
Pour the peanut butter fudge mixture immediately into the prepared tin, scraping out the saucepan to get every last bit. Gently spread it into an even layer and set aside.
-
FOR THE CARAMEL LAYER:
Rinse out the saucepan thoroughly and return it to low heat. Add the unsalted butter, sweetened condensed milk, light brown sugar, and golden syrup. Stir constantly, without letting it boil rapidly, until all the sugar is completely dissolved.
-
Once the sugar is dissolved, allow the mixture to come to a gentle bubble. Continue to let it bubble, stirring and moving it around the pan constantly to prevent it from burning, for another 4-5 minutes. The caramel will visibly thicken and its color will deepen slightly to a rich golden hue.
-
Remove the caramel mixture from the heat. Stir in the vanilla extract and salt until well combined.
-
Pour the warm caramel evenly over the peanut butter fudge layer in the tin. Immediately scatter the unsalted peanuts over the top of the caramel for crunch.
-
Chill the fudge in the refrigerator for at least 30 minutes to allow the caramel to set slightly before adding the final chocolate topping.
-
FOR THE CHOCOLATE TOPPING (GANACHE):
Place the finely chopped milk chocolate in a medium heatproof bowl and set aside.
-
In a small saucepan, heat the thickened cream over medium heat until it just begins to bubble around the edges. Pour the hot cream over the chopped chocolate in the bowl. Gently shake the bowl slightly to ensure the chocolate is submerged under the cream. Let it sit undisturbed for 3 minutes to allow the chocolate to melt. After 3 minutes, stir gently with a whisk or spoon until you achieve a smooth, glossy ganache.
-
Pour the finished ganache over the chilled caramel layer, spreading it evenly across the surface. Return the fudge to the refrigerator and chill for a further 3-4 hours, or until it is completely firm and set, before cutting it into squares.
-
Once chilled, lift the fudge out of the pan using the baking paper overhang and cut into desired square sizes. Enjoy!
Notes
- This **Caramel Peanut Fudge** is best stored in an airtight container in the refrigerator to maintain its freshness and texture.
- For the caramel layer, if golden syrup is not available, you can successfully substitute it with brown rice malt syrup or corn syrup. While honey could work, it would impart a slightly different flavor profile to the caramel.
- If, at any point during the preparation of the peanut butter fudge, the mixture appears to be splitting or separating (the fat may seem to be separating from the solids), simply remove it from the heat and stir it vigorously and continuously. The warmth and agitation will typically bring it back together into a smooth, cohesive mixture.
