  • Dry ingredients: In a large bowl, combine the flour, sugar, salt, yeast, and baking soda. Ensure that the yeast and salt are not directly touching initially.
  • Make the batter: Add the warm water to the dry ingredients. Use a handheld electric beater to beat the mixture for 1 full minute. Begin on low-medium speed to avoid splattering, then gradually increase to medium-high.
  • Rest the batter: Cover the bowl with a clean tea towel or a plate and place it in a warm location for 30-45 minutes. By the end of this period, the batter should appear slightly frothy on top, though it won’t rise significantly.
  • Prep the crumpet rings: Lightly grease the inside of 3-4 crumpet rings with a little butter. Then, dip them in flour and tap off any excess. This helps prevent sticking.
  • Heat the pan: Heat a large, non-stick, flat-bottomed frying pan over medium-high heat. Allow it to heat for a couple of minutes until you can feel distinct warmth when hovering your hand over the surface.
  • Cook (stage 1): Place 2-3 of the prepped crumpet rings into the hot pan. Pour about 1/4 cup of batter into each ring. Cook for 5-6 minutes until a dry, cooked ring of batter is visible around the edges, and numerous bubbles burst all around the crumpets’ surface.
  • Cook (stage 2): Reduce the heat to low-medium and continue cooking for another 5-6 minutes. The crumpets are fully cooked when all the bubbles have popped and their tops appear dry and set. Once dry, no more bubbles will burst.
  • Flip & finish: Carefully remove the crumpet rings. Flip the crumpets for just 2-3 seconds – this is enough to lightly seal the top without allowing them to brown significantly. Remove them from the pan and let them cool on a wire rack.
  • Clean the crumpet rings thoroughly, then re-grease and flour them. Begin again from step 6 for the remaining batter until all crumpets are cooked.

    Once all crumpets are made, they are edible but require toasting before eating to achieve that perfect crisp exterior and soft, chewy interior. You can toast them immediately (see next step) or store them in an airtight container in the refrigerator for 3-4 days, or freeze them for up to 3 months.

  • Toast & serve: Always toast crumpets until they are golden-brown before serving. If you’re serving them immediately after cooking, simply leave them in the pan after flipping until their tops achieve a golden hue. For crumpets made in advance, a toaster is the easiest way to get them beautifully golden and crisp on both the top and bottom, but a broiler (overhead grill) also works effectively.

    • By the end of Stage 2 cooking, all bubbles on the surface should have popped, and the entire top surface should appear dry and set. If you find the tops aren’t drying completely but most bubbles have popped, a quick flip at the very end (as described in the instructions) will be sufficient to seal them without browning.
  4. Storage Guidelines: Cooked crumpets can be stored in an airtight container at room temperature for 3-4 days. For longer storage, they freeze exceptionally well for up to 3 months.
