Unleash the Cuteness: Making the Cutest Monster Cookies EVER!

The inspiration for these adorable monster cookies struck me like a bolt of lightning, as many great baking ideas often do. The vision was clear: tiny, whimsical eyes peeking out from a vibrant, buttercream-filled cookie sandwich. And just like that, the concept for the perfect, eye-catching Halloween treat was born. These cookies aren’t just a dessert; they’re a delightful piece of edible art that embodies the playful side of Halloween.

The candy eyes truly deserve all the accolades here. They are the star, elevating simple chocolate sandwich cookies to a whole new level of charm. Paired with the vivid purple and orange vanilla buttercream, they create a striking contrast and an unmistakable festive appeal. Without these whimsical embellishments, you’d still have wonderfully rich and delicious chocolate sandwich cookies with a creamy vanilla center. But with the addition of those expressive candy eyes and the burst of color, they are utterly transformed into enchanting little monsters.

I genuinely adore these little creations. They evoke a sense of playfulness and joy. I even found myself hesitating before taking a bite, feeling a little sorry for them! Is that strange? Perhaps, but one look at their cutesy-wootsy faces, and you’ll understand. These monster cookies are guaranteed to spark giggles and smiles, making them an instant hit at any Halloween gathering.

How to Create Your Own Spooky Sweet Halloween Cookies

What truly sets these cookies apart – besides their undeniable charm (a triumphant display of monster-ness!) – is their incredible simplicity. They are designed for ease, making them the perfect project for involving your little kitchen helpers. Get the kids excited and engaged, because these treats are not only fun to make but require minimal time and effort. Here’s a quick overview of the straightforward steps to creating your own batch of delightful monster cookies:

  1. Whip Up the Cookie Dough: With your trusty food processor, the chocolate cookie dough comes together in a flash – we’re talking about 5 minutes, tops! This eliminates the need for lengthy creaming and mixing, letting you get straight to the fun part.
  2. Shape and Cut: Rolling out the dough and cutting out the perfect circular cookie shapes is a breeze. Dedicate about 10 minutes to this step, ensuring you get as many cookies as possible from your well-chilled dough.
  3. Craft the Creamy Filling: A quick rinse of the food processor bowl, and you’re ready to create the smooth and vibrant vanilla buttercream filling. Another 5 minutes in the processor, and your creamy concoction is ready for coloring.
  4. Assemble and Decorate: This is where the magic truly happens! Sandwiching the baked cookies with the colorful buttercream and adorning them with candy eyes and sprinkles takes approximately 10 minutes. Watch as simple cookies transform into a playful parade of monsters before your very eyes.

The entire hands-on process, from start to finish, is designed to be efficient and enjoyable. Even with the enthusiastic “help” of children, the process remains manageable and incredibly rewarding. You’ll be amazed at how quickly these charming treats come to life, ready to impress and delight.

Regardless, I guarantee that the experience will be filled with laughter and fun. You’ll find yourself beaming with pride over your collection of little monster Halloween cookies, perhaps even reluctant to take the first bite. Plus, every time you glance at their quirky, endearing faces, a giggle is practically inevitable – at least, it always is for me.

So, let’s get your Halloween baking adventures started! Prepare a batch of these delightful Halloween treats, perfect for handing out to eager trick-or-treaters or as a festive centerpiece for your upcoming Halloween party. You’ll discover that baking for Halloween has never been so charming, simple, or utterly enjoyable.

Ingredients

For the Chocolate Cookies:

  • 260 g / 2 cups / 9.2oz plain (all-purpose) flour
  • 60 g / ½ cup Dutch processed cocoa
  • 1/2 teaspoon baking powder
  • ¾ cup / 150g / 5.3oz white sugar
  • 113 g / 1/2 cup / 1 stick unsalted butter, cold & cut into cubes
  • 1 large egg, cold
  • 1 teaspoon vanilla extract
  • 1 tablespoon cold milk (notes)

For the Vanilla Buttercream Filling & Decoration:

  • 1 1/2 cups / 195g icing (confectioners / powdered) sugar
  • 80 g / 2/3 stick unsalted butter, softened
  • 2 teaspoons thickened / heavy cream
  • 1 teaspoon vanilla extract
  • pinch of salt
  • Purple and orange food coloring
  • Sprinkles and candy monster eyes for decorating

For the most accurate and consistent results, it is highly recommended to always weigh your ingredients, especially flour and sugar, where a weight is provided.

Instructions

For the Chocolate Cookies:

  • Begin by preheating your oven to 180°C / 350°F (160°C for fan-forced ovens). Prepare two baking trays by lining them with parchment paper. This will prevent sticking and ensure even baking.
  • In the bowl of your food processor, combine the flour, baking powder, Dutch-processed cocoa, and white sugar. Pulse briefly until all ingredients are well combined. Next, add the cold butter, cut into small cubes. Process again until the butter is finely chopped and evenly distributed throughout the flour mixture, resembling coarse crumbs. It’s perfectly fine if you can still discern very small pieces of butter at this stage; this helps create tender cookies.
  • Finally, add the cold egg, vanilla extract, and half of the cold milk. Process once more until the dough begins to form large clumps and all the dry ingredients are fully incorporated. If the dough doesn’t quite come together or feels too dry, add the remaining milk and blitz briefly until a cohesive dough forms. Be careful not to overmix.
  • Carefully tip the dough mixture out onto a clean, lightly floured surface. Gently bring the dough together with your hands, kneading lightly for just a minute or so until it forms a smooth, unified ball. Avoid excessive kneading.
  • Lay out a long sheet of baking paper (approximately 70 cm or 28 inches in length). Place the dough in the center of one half of the paper. Fold the other half of the baking paper over the top of the dough. Using a rolling pin, roll the dough out evenly to a thickness of about 4-5mm (approximately 1/5 inch). To prevent creases or indentations, occasionally peel the top baking paper away, smooth it, then gently replace it. Flip the entire dough package over and repeat the process on the other side.
  • Transfer the wrapped dough to the refrigerator and chill for at least 30 minutes. This step is crucial for firming up the dough, making it easier to cut and preventing the cookies from spreading too much during baking.
  • Once chilled, remove the dough from the fridge and unwrap. Use a 2-inch circular cookie cutter to cut out as many cookies as you can. Carefully transfer these cut-outs to your prepared baking trays, spacing them approximately 1 inch apart. Gather any dough scraps, gently re-roll them, and continue cutting until all the dough has been used.
  • Bake in the preheated oven for 6 minutes. Then, rotate the baking trays 180 degrees to ensure even baking, and continue to bake for another 6 minutes. The cookies should be set and firm but still slightly soft to the touch. Immediately transfer the baked cookies to a wire rack to cool completely. This cooling process is vital before filling and decorating to prevent the buttercream from melting.

For the Vanilla Buttercream Filling & Assembly:

  • Give your food processor bowl a quick rinse and wipe clean. Add the icing sugar, softened butter, heavy cream, vanilla extract, and a pinch of salt. Process all these ingredients together on a low setting for approximately 2-3 minutes, or until the buttercream becomes beautifully smooth, light, and pale. Scrape down the sides of the bowl as needed to ensure everything is thoroughly combined.
  • Divide the prepared vanilla buttercream evenly between two separate bowls. Into one bowl, mix in your desired amount of orange food coloring until you achieve a vibrant, consistent hue. Repeat this process with purple food coloring in the second bowl. Feel free to adjust the intensity of the colors to your liking.
  • Take one cooled chocolate cookie. Place a generous teaspoon of either purple or orange buttercream onto the flat side of the cookie, positioning it slightly off-center. This off-center placement creates a more whimsical, “monster-like” look when the top cookie is added. Now, gently press another chocolate cookie on top, slightly angled, allowing some of the buttercream to peek out around the edges. This creates a fluffy, colorful “body” for your monster.
  • Immediately affix the candy monster eyes onto the exposed buttercream, making them look like they’re peering out from under the top cookie. If desired, add a sprinkle of festive Halloween sprinkles around the buttercream for extra flair. If the buttercream feels too soft to hold its shape, place the assembled cookies in the refrigerator for a short period to allow the filling to firm up. Otherwise, these delightful monster cookies are ready to serve and enjoy straight away!

Helpful Notes for Success:

  1. Measuring Milk: Please note that I use a standard Australian 20ml tablespoon in this recipe, which is equivalent to 4 standard teaspoons. Adjust accordingly if your tablespoon measures differently.
  2. Accuracy in Baking: For the very best results in baking, always measure ingredients like flour and sugar by weight rather than volume. Digital kitchen scales, like these examples, are relatively inexpensive and provide superior precision. If weighing is not an option, use the ‘spoon and level’ method for flour (gently spoon flour into the measuring cup and level off with a straight edge) rather than scooping directly from the bag, which can compact the flour and lead to too much being used.
  3. Chilling is Key: Don’t skip the chilling step for the cookie dough! This prevents the cookies from spreading too much in the oven, ensuring they maintain their shape for perfect sandwiching.
  4. Creative Decorating: While purple and orange are classic Halloween colors, feel free to use other vibrant food colorings for your buttercream. Experiment with different sprinkles, edible glitter, or even tiny candy corn to give each monster a unique personality.
  5. Storage: Once decorated, these cookies can be stored in an airtight container at room temperature for up to 3-4 days, or in the refrigerator for up to a week. If stacking, place parchment paper between layers to prevent the buttercream from sticking.
